Mint Chocolate Chip Cookies

Guys, I am totally STRESSING.  I know it’s Friday and I shouldn’t be, but I can’t shake this “so much to do, so little time” feeling.  Blah.

You know what would make me feel better?  A chocolate chip cookie.  Just one, I really only need one.  (Or so I tell myself)

And whatdayaknow, a friend just sent me this:

The first thing I thought was, “Mmmmmmm look at that chocolate.”  And then I thought, “Hey wait.  It’s green?”

This, my dear readers, is a Mint Chocolate Chip Cookie via Betty Crocker, who is super hip and has her own Flickr stream with recipes to reach out to other cookie-deprived people. Thank you, Betty, you sure are saving the day for me.

All we need to make these babies are:

1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1/2 cup butter or margarine, softened
1/4 to 1/2 teaspoon mint extract
6 to 8 drops green food color
1 egg
1 cup creme de menthe baking chips
1 cup semisweet chocolate chunks

And then we:

1. Heat oven to 350°F. In large bowl, stir cookie mix, butter, extract, food color and egg until soft dough forms. Stir in creme de menthe baking chips and chocolate chunks.

2. Using small cookie scoop or teaspoon, drop dough 2 inches apart on ungreased cookie sheet.

3. Bake 8 to 10 minutes or until set. Cool 3 minutes; remove from cookie sheet to wire rack. Serve warm or cool completely. Store tightly covered at room temperature.


And tah-dah!  We all have smiles on our faces, since it’s Friday and now we’ve got cookies.  Thanks again, Betty.

PS: Creme de Menthe is like…an Andes candy?  I love those!  *chop chop chop into cookies*
